Chocolate French shortbread biscuits

You can make your own kiwi thin apple pie or make chocolate French shortbread biscuits.
Ingredients (24 biscuits)
- 150 g high grade flour
- 75 g unsalted butter
- 75 g caster/white sugar
- 1 egg
- 1 pinch of salt
- 50g dark chocolate
- chocolate sprinkles
Directions
- Mix the flour, the sugar, salt, the butter (cut into small pieces) by squeezing and rubbing the palms of the hands together to make "sand"
- Add the egg quickly to this sandy mixture
- Put in a ball. Crush the dough with the palm of your hand several times to blend the whole thing
- Cover with a little bit flour and let stand in a cool place about 30 minutes, covered with a wet cloth
- Preheat the oven to 200 °C
- Spread the dough with a roll of 1/2 cm thick
- Cut out the dough with a cookie cutter
- Put the shortbread on an oven tray (with baking paper)
- Bake about 10 minutes in the oven,
- Melt the chocolate in a bain-marie
- Brush the biscuits with chocolate and sprinkle immediately
